LASAGNE

OK. I have made lasagne for a really long time... and Stephen would always ask me to put more and MORE cheese in it... So, after years of "tweeking" this is the FINAL recipe! :)

it's A LOT of cheese!!!
***it makes about 3 lasagne's... so, it's a great one to stock up in the freezer...***

1 1/2 boxes of oven ready lasagna noodles

1 container of Ricotta cheese
1 lb mozzarella
1 large curd cottage cheese container
1 box of cream cheese

2 cans of spagetti sauce
2 cans italian diced tomatoes
2 lbs cooked hamburger (sometimes I will do 1 lb hamburger, 1 lb italian sausage)

cook meat. Season with Italian seasoning. mix with red sauce and tomatoes-- in a really big bowl. set aside.

mix all cheeses. (I melt the cream cheese a bit so it's easier to stir) in a really big bowl...

layer red sauce, noodles, red sauce, cheese, noodles, red sauce... just make sure the noodles are covered with the sauce or they will end up hard...

cook 375 for about an hour.... YUMMO!!

RANCH BURGERS

this is a family FAVORITE!!

seriously. I make it once a week....

1ish lb. hamburger
1 packet ranch dressing
1 cup cheese
1 egg

I know. Easy 'eh??

the kiddos love it.... we don't use buns---> just good 'ole ketchup...

it's kinda messy-between the egg and cheese.... but, Oh SO GOOD!!

MEXI WRAP

ok. I was desperate the other night... i just threw together a few things... and it turned out WONDERFUL! This is what I did...

I pkg. of spanish rice
1 can of black beans
1 cup of cheese
1lb cooked hamburger~seasoned
lots 'o sour cream
a bit of taco sauce

I combined all of it and put it in tortillas...yummo!!

TACO SOUP

***thanks Meganfor this YUMMY recipe...

TACO SOUP

1 can beef broth
1 can diced tomatoes
1 can corn
1 can kidney beans
1 can cream of potato soup
1 lb. beef (browned)
1 med. onion (diced)
1 pkg. taco seasoning
-combine all ingredients (without draining any of the cans) and cook on low heat on stovetop for 1 hour. Top with cheese and sour cream. Use tortilla chips (I prefer the Tostitos Scoops) to scoop the soup up or serve with cornbread.

My kids love this one because they get to eat chips with their meal. Very quick and easy to make.
