I just buy a couple of pounds--wash them-- then put a handful in little baggies-- toss them in the freezer-- then the kids just grab a bag out for a treat! it's perfect. ;)
freakin good pork chops
this is one of Amanda's all-time favorite things to make for dinner. It is WAY easy and freakin' good.
Coke and Ketchup Pork Chops.
Ingredients:
1 Can Coke
About 1 1/2 cups Ketchup
4-6 Pork Chops
Easy-make Rice
Directions:
Brown Pork Chops in a large skillet. Add equal amounts of coke and ketchup to skillet and stir until mixed throughly. Bring mixture to a boil stirring frequently. Once sauce begins to boil, decrease temperature and simmer Coke and Ketchup for about 20 minutes and stir occasionally until sauce thickens. During that time, cook up your easy-make rice. The coke and ketchup sauce makes a nummy topping for the rice. Serve with sauce on top of pork chops and rice. Yumm Yumm!

LASAGNE
OK. I have made lasagne for a really long time... and Stephen would always ask me to put more and MORE cheese in it... So, after years of "tweeking" this is the FINAL recipe! :)
it's A LOT of cheese!!!
***it makes about 3 lasagne's... so, it's a great one to stock up in the freezer...***
1 1/2 boxes of oven ready lasagna noodles
1 container of Ricotta cheese
1 lb mozzarella
1 large curd cottage cheese container
1 box of cream cheese
2 cans of spagetti sauce
2 cans italian diced tomatoes
2 lbs cooked hamburger (sometimes I will do 1 lb hamburger, 1 lb italian sausage)
cook meat. Season with Italian seasoning. mix with red sauce and tomatoes-- in a really big bowl. set aside.
mix all cheeses. (I melt the cream cheese a bit so it's easier to stir) in a really big bowl...
layer red sauce, noodles, red sauce, cheese, noodles, red sauce... just make sure the noodles are covered with the sauce or they will end up hard...
cook 375 for about an hour.... YUMMO!!

I use 2 cake mixes in order to make it worth my time and in fact I will want to eat 2 boxes. If for some sick reason you don't want this many, cut the recipe in half.
2 boxes of chocolate cake mix
4 eggs
1 c. oil
Frosting
2 c. powdered sugar
1 (8oz.) package of cream cheese
1/2 C. softened butter
Preheat oven to 350. Mix dry cake mix, eggs, and oil. Scoop up by spoonful and roll into balls. (They stay closer to round this way.) Place on cookie sheet. Bake for 8 minutes.
Filling: In a mixer, mix powdered sugar, cream cheese, and butter. When cookies have cooled makes little sandwiches. Refrigerate anything you haven't devoured.

PORK NOODLES
a yummy recipe from Amy...
Pork Noodles
Cooked pasta (long noodles look more Asian but shapes are sometimes easier for kids to get on a spoon, unless you adore slurping)
Boiled eggs
Cooked pork chops
Warm beef broth with garlic (or a garlic/ginger combo for a more Asian taste) and chives. Add until it tastes good to you.
green onions chopped
Let every one add to their own bowl what parts they like
Noodles with broth and chopped up pork, garnish with green onions and chopped up boiled eggs.
